The filling for this blueberry pie with ginger will be loose when it comes out of the oven, but as long as you let it rest for the full 4 hours, it will firm beautifully.

    • If you're not needing much motion and/or requiring much downward pressure, rather than the AC I prefer to use 2 same, or similar, sized mixing bowls. Put a little ice (crushed/coarsely blended is better) and water into one (the smaller of they're different sized) and then put the other bowl on top where you're making your pastry. Just not too much as it may end up all over the place. Its the same technique you would use to melt chocolate but you're cooling instead. Going with glass (for the top bowl - the bottom doesn't matter other than for sizing and condensation issues) gives a slower but more even/passive cooling where as stainless steel gives a stronger and more instant cooling. Works great especially in summer as you may not wish to use quite so much AC. My kitchen doesn't have AC outside of leaving my fridge and/or freezer doors open so its a better solution to having to cool the next room which is significantly larger.

  • Not quite perfect. Needs whipped cream topping. Whole heavy whipping cream. Melt some pollen honey in a stainless cup over the stove, pour into the whipped cream when it's setting up. Continue to whip until stiff. Put a good WHOP of the stuff on pie. It's the best.

  • Definitely use fresh NOT frozen blueberries, I followed this using premade pastry and frozen blue berries and it was sloppy as hell, flavour was great though, should have used more cornstarch and less sugar
