The filling for this blueberry pie with ginger will be loose when it comes out of the oven, but as long as you let it rest for the full 4 hours, it will firm beautifully.

    • cut the butter into i tbsp chunks and put it in the freezer for ~15 minutes and then use a pastry cutter to mix it into the flour and it will come out perfect every time. even if you have hot hands

  • I watched her cut off the extra pie dough and thought "Yummy! That's the best part! Sprinkle some cinnamon and sugar on it and bake it in the oven, and then don't be surprised if the next time you make pie you 'accidentally' make extra dough."

  • My mom used to own a bakery. She never told me pie was hard so I never thought of it that way. I've never made a 'perfect' pie in my life, mind you. If I wanted a perfect pie, I'd go buy one :P I live in a hot and humid part of the world so a thing I do is make pie dough in a double bowl with iced water on the outside.

  • I made the pie it was amazing the crust was perfect and the taste of the filling was complex. The only things I changed from the recipe from the website was I used an 8 inch pan because its all I got and I was a little short with my lime juice due to very small limes. The only changes I would make if I were to make it again is used more cornstarch like 1/2 cup because when I cut into it four hours later it was swimming in juices.

    • The fridge is actually where you really need to rest it. The butter needs to stay cold for ease of manipulation. Good luck!

  • CARLA, the BA recipe for the pie crust is magnificent. I knew because of the altitude in Salt Lake City I had to adjust the liquid measurements but other than that it took me 45 mins to make 4 crusts and they turned out excellent. Definitely one of the best crusts I’ve ever made and they turned into wonderful apple and pumpkin pies for Thanksgiving. Thanks Carla and BA

  • Hello, just a question: if you leave the pie to cool overnight, in the words of Mary Berry "soggy bottom"? I don't think it would matter-it would still taste amazing!!
